Gas water heater, about 5 years old, residential.

A very new development is that the pilot goes out daily.

After re-ignition, when the manifold lights to heat the water tank, it almost sounds as if water is dripping on the (flaming) manifold.

The home is on well/ septic; as such, the water is very cold.

I might be inclined to suspect that the water that I hear dripping on the flames is condensation from the tank - but that is a total guess.

I do see condensation on the cpvc-cold water lines feeding the house.

I think you ought to contact GE -- or maybe Rheem, as Rheem manufactures the GE label, since the tank is probably still under warranty, and see what solution it can come up with. It does sound as if condensation is falling on the thermocouple. Rheem may have a ready-made solution. For us to suggest something could get us into liability issues.

It sounds like you have two different problems.  If the water dripping is condensation then the dripping should stop once the heater heats up.  If the pilot is going out  after the heater has been heated, it will be a gas valve problem or a thermocoupler.
